Vegan Pastel Azteca con Salsa Verde



There are layers of corn tortillas, salsa verde, a savory vegetable and bean mixture, and melty vegan cheese in this vegan take on the traditional Pastel Azteca. This dish tastes great and fills you up, making it perfect for a cozy dinner.

Ingredients:

  • 12 corn tortillas
  • 2 cups salsa verde
  • 2 cups cooked black beans
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 2 cups vegan cheese, shredded
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions:

Preheat the oven to 350F 175C

In a skillet, heat olive oil over medium heat

Saut onions and bell peppers until softened

Add corn, diced tomatoes, black beans, ground cumin, chili powder, salt, and pepper

Cook for 5 minutes, stirring occasionally

In a baking dish, spread a layer of salsa verde

Arrange a layer of corn tortillas on top of the salsa verde

Spread half of the vegetable and bean mixture over the tortillas

Sprinkle a layer of vegan cheese on top

Repeat the layers: salsa verde, tortillas, vegetable and bean mixture, and cheese

Cover the dish with aluminum foil and bake for 25-30 minutes, or until heated through and the cheese is melted

Garnish with fresh cilantro before serving

Vegan Jaffa Cake Pancakes



These vegan Jaffa Cake pancakes are a delightful twist on the classic dessert. With a fluffy cocoa-infused base topped with tangy orange marmalade and rich dark chocolate chips, they're sure to satisfy your cravings for something sweet and indulgent.

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons cocoa powder
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup almond milk
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup orange marmalade
  • 1/4 cup dark chocolate chips

Instructions:

Mix the cocoa powder, sugar, baking powder, and salt in a bowl with a whisk

Put in the vanilla extract, almond milk, and vegetable oil

Stir until everything is just mixed, being careful not to mix it too much

Warm up a griddle or skillet that doesn't stick over medium heat

Use a little oil or vegan butter to grease it up

For each pancake, put 1/4 cup of batter on the pan

Cook until the top starts to bubble, then turn it over and cook until the other side is just barely browned

Put some orange marmalade on top of each pancake after it's done cooking and then add dark chocolate chips on top of that

Enjoy while still warm!

Vegan Pizza Tacos



You can enjoy the mix of pizza flavors in the form of a convenient taco. These vegan pizza tacos are full of tasty veggies and have melty vegan cheese on top. Great for a quick dinner during the week or having people over.

Ingredients:

  • 6 small tortillas
  • 1 cup vegan cheese, shredded
  • 1 cup marinara sauce
  • 1 cup bell peppers, diced
  • 1 cup mushrooms, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup black olives, sliced
  • 1/4 cup fresh basil leaves, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions:

Preheat oven to 375F 190C

Brush each tortilla with olive oil and sprinkle with salt

Drape each tortilla over two bars of the oven rack, creating a taco shell shape

Bake for 7-8 minutes until the edges are crispy

Remove from the oven and let cool slightly

Fill each taco shell with vegan cheese, marinara sauce, bell peppers, mushrooms, cherry tomatoes, red onion, black olives, and fresh basil

Return filled tacos to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly

Serve hot, garnished with additional fresh basil leaves if desired

Healthy No Bake Chocolate Strawberry Cheesecake



This healthy no-bake cheesecake has rich chocolate and strawberry flavors that you will love. With healthy ingredients, it's a dessert that will satisfy your sweet tooth without making you feel bad.

Ingredients:

  • 2 cups raw cashews, soaked overnight
  • 1 cup pitted dates
  • 1/2 cup rolled oats
  • 1/2 cup cocoa powder
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 cup strawberries, sliced
  • 1/4 cup dark chocolate chips vegan

Instructions:

Put dates, oats, cocoa powder, coconut oil, and maple syrup in a food processor

Blend them together until a sticky dough forms

So that the crust is even, press the mixture into the bottom of a cake pan that has been lined

Put soaked cashews and vanilla extract in a blender

Blend until the mixture is smooth and creamy

Spread the cashew mix on top of the cake pan's crust

On top of the cashew mixture, put strawberry slices

Dark chocolate chips should be put on top of the strawberries

Freeze the cheesecake for at least four hours, or until it's set

If it's not frozen yet, take it out, cut it up, and serve it cold
