Ingredients:
- 1 bunch asparagus, trimmed and cut into bite-sized pieces
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 small onion, thinly sliced
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon maple syrup
- 1 teaspoon ginger, grated
- 1 teaspoon cornstarch
- 2 tablespoons water
- 2 tablespoons chopped green onions, for garnish
- 2 tablespoons sesame seeds, for garnish
- Cooked rice, for serving
Instructions:
Sesame oil, maple syrup, grated ginger, and soy sauce should all be mixed together in a small bowl
Put away
Mix water and cornstarch in another small bowl to make a slurry
Put away
Place a big pan or wok on medium-high heat
If you need to, add a little water or oil
Put bell peppers, onion slices, and minced garlic into the pan
For two to three minutes, or until slightly softened, stir-fry
Add the asparagus to the pan and stir-fry for three to four more minutes, until the asparagus is soft but still has some crunch
Add the sauce to the vegetables and mix them around to make sure they are well covered
Add one to two more minutes of cooking
Mix the cornstarch with water and add it to the pan
Stir it around well
Put the sauce back on the heat for one more minute
Take the stir-fry off the heat and put it in a dish to serve
Put green onions and sesame seeds that have been chopped on top
Serve hot with rice that has been cooked
